Here is a recipe for specialty bread that will rise to the occasion for Easter break- fast or brunch. Italian Easter Bread 3-3 1/2 C. flour 1/4 C. sugar 1 pkg. active dry yeast 1 tsp. salt 2/3 C. warm milk (120-130 0 ) 2 Tbsp. butter, softened 7 eggs 1/2 C. chopped mixed candied fruit 1/4 C. blanched almonds 1/2 tsp. aniseed Vegetable oil In a mixing bowl combine 1 C. flour, sugar, yeast and salt. Add milk and butter, beat two minutes on medium. Add two eggs and 1/2 C. flour, beat two minutes on high. Stir in fruits, nuts and aniseeds, mix well. Stir in enough remaining flour to form soft dough. Turn onto a lightly floured board, knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turn once to grease top. Cover and let rise in a warm place until double in size, about one hour. If desired, dye remaining eggs (leave them uncooked), lightly rub with oil. Punch dough down. Divide in half, roll each piece into a 24 inch rope. Loosely twist ropes together, place on a greased baking sheet and form into a ring. Pinch ends together. Gently split ropes and tuck eggs into openings. Cover, let rise until double in size, about 30 minutes. Bake at 350° for 30-35 minutes or until golden brown. Remove from pan, cool on a wire rack. Yields one loaf. Glaze: Combine glaze ingre- dients and drizzle over rolls. *Both the Italians and Swiss prepare this festive Easter bread with colored eggs em- bedded in the dough. Following are a couple of stories from back then. Flax Fiber Mill Has Small fire A fire at the firs fiber mill Friday afternoon was started when some- one carelessly threw a lighted cigar stub in a bunch of straw outside the mill. No damage was done, but it caused a lot of excitement. A few moments after a still alarm was sent in, the local fire brigade went clanging down the street in tow of automobiles. Following in its wake were dozens of automobiles, loaded to the running boards with volunteer fire-fighters and trailed by others who, failing to get aboard, hot -footed it to the mill. The volunteer fire boys got there in remarkably quick time and con- nected up with a near -by creek at the tnoment the fire was in imminent danger of working its way through the floor joists to a quantity of straw stored inside. This was water-soaked. This is the second fire that has occurred at the mill: on a former oc- casion a large quantity of straw being destroyed. \No smoking\ signs are posted in numerous places, but apparently are disregarded.
