Meals served must be acceptable to the elderly consumer, meet 1/3 RDA and provide a minimum of 600 calories. Meals will be served on days and times mutu- ally agreed upon by the two par- ties. The following meal pattern is required: Meat or meat alternate - 3 serv- ings. serving = One ounce cooked lean meat, poultry or fish, 1/2 cup beans. I egg; vegetables and fruit, 3 servings, vegetable serv- ing = 1 cup leafy greens or 1/2 cup cooked; fruit serving = 1/2 cup or one serving; grains - 2 servings; milk or dairy equiva- lent - 1 serving; coffee or hot tea. The caterer is responsible for following all safety and sanita- tion regulations as established by the State of Montana under the 2013 Model Food Code for retail establishments, including the 2015 rule update. Caterers must be inspected by the county sani- tarian and the caterer must have the appropriate business license. The caterer is responsible for paying all costs of food, supplies. labor and other costs as necessary in providing the meals. Meals may be served on site or catered to another location.
