Its di- gestive activity varier in acoorderce with the kind of proteid to which It is subjected. Fibrin disappears en- tirely efter a time, says a medical authority. With the coagulated albomin of eggs the digestive process is slow, while ;he albumin of men; its notion seems first to produce a noloy galat- inous mass which, however, com- pletely dissolves after a short time. When a slice of fresh nineanple is placed 'upon a raw beefsteak th- sur- face of the steak becomes gmarbially gelatinous owing to the digest' ve ac- tion of the enzyme of the juice. Of course, it is well known thn, -st- ive agents exist also in other fruits, but as it is considered that anaverrge- sized pineapple will yield nearly two pints of juice it will be seen that the digestive ection of the whole fruit must be enormous. The _rejig. ity of this peculiar digestth agent is destroyed in the coot - el pineapple. but unless the pineapple is preserved by heat there is no reason why the tinned fruit should not retain the digest ire power. The active digestive principle may be obtained from the juice by dissolv- ing a large quantity of common salt it, when a precipitate is obtained possessing the remarkable digestive powers just descr:bed. Unlike pep- sin, the digestive principle of the pineapple will operate in an acid, neutral, or even alkaline medium, ac- cording to the kind of proteid to which it is presented. It may, there- fore, be assumed that the pineapple enzyme would not only aid the work of digestion in the stomach, but would continue -- hat action in the in- test'nal tract. Pineapple, it may be added, eon:eine much indigestible matter . of the nature of woody fiber, but it in quite p sssible that the de- cidedly digestive troperties of the juice compensate or this fact. • PUNGENT PARAGRAPHS.
